Jacqui’s Gluten-free Corn Bread
1 cup cornmeal
1 cup Bob’s Redmill All Purpose Gluten Free Flour
3/4 tsp xanthan gum
1/2 tsp salt
2tsp baking powder
1/4 cup olive oil
3 TBsp honey
2 eggs
1/2 cup milk
Mix dry ingredients in a bowl. Mix all wet ingredients in a bowl. Add the wet to the dry and mix. Then let sit for 10 minutes. Bake for 20 minutes at 400 degrees.
Allow to cool for ten minutes before cutting.
If you fancy something a little spicy…add some chopped jalapeno peppers when you mix the wet and dry ingredients.
